Cajun Stuffed Trout (#1116)

A highly seasoned Cajun vegetable dish of corn, bell pepper, onion, herbs and smoky ham makes a terrific stuffing for trout.

Small-boned trout make a lovely presentation served whole, but you can ask the fishmonger to remove the heads if you wish. If you have a hinged fish grilling basket, turning the fish is a breeze. If you don't, keep the trout and filling intact by using a large spatula and turning only once during grilling.

2 tablespoons butter
1 medium onion, chopped
1 small green bell pepper, chopped
3/4 cup fresh corn kernels or frozen corn kernels, thawed
1/3 cup coarsely chopped ham (about 2 oz.)
1/2 teaspoon hot pepper sauce
2 tablespoons chopped fresh thyme
1/4 teaspoon salt
1/4 cup yellow cornmeal
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
4 (8- to 10-oz.) boned whole trout
Lemon wedges

1. Melt butter in medium skillet over medium heat. Add onion, pepper, corn and ham; cook 8 to 10 minutes or until golden brown, stirring often. Stir in hot pepper sauce, thyme and 1/4 teaspoon salt. Remove from heat; cool slightly. (Vegetable mixture can be made up to 8 hours ahead. Cover and refrigerate. Bring to room temperature before using.)

2. In shallow dish, stir together cornmeal, 1/4 teaspoon salt and pepper. Rinse trout inside and out (do not pat dry). Stuff each trout with about 1/4 cup filling; secure openings with metal skewers.* Coat both sides of trout with cornmeal mixture.

3. Heat grill; lightly oil grill rack. Place trout on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Grill 10 to 12 minutes or until trout just begins to flake, turning once. Remove skewers; serve with lemon wedges.

TIP *Small metal skewers, such as those used to skewer turkey, work best in this recipe.
