Yield: 4 to 6 servings

2 pounds boneless beef sirloin, cut into thin strips

1/2 cup all-purpose flour

5 tablespoons butter, divided

1 1/2 cups chopped onions

8 ounces sliced mushrooms


Ground black pepper

1 cup tomato juice

2 tablespoons sherry

1 1/2 cups water

1 cup sour cream

Hot cooked noodles or rice

Dip beef strips in flour, coating completely. Melt 3 tablespoons of butter in a
skillet. Add beef, working in batches if necessary to prevent overcrowding, and
cook until browned, stirring frequently. Remove meat with a slotted spoon; set

Add remaining 2 tablespoons butter to the skillet. When butter melts, add
onions and mushrooms; cook until tender, about 5 minutes.

Return meat to skillet; sprinkle with salt and pepper to taste. Stir in tomato
juice, sherry and water; bring to a boil. Reduce heat, cover and simmer until
beef is tender, 1 1/2 to 2 hours. Adjust seasonings to taste. Stir in sour
cream and heat through but do not let boil. Serve immediately over noodles or
