Naked Ravioli (Ravioli Nudi)

Yield: 4 to 6 servings

1/2 pound ground veal or other ground meat

1/2 pound ground pork or other ground meat

1 egg

1/4 cup grated Parmesan cheese, plus more for garnish

1/4 cup chopped fresh parsley leaves

1/4 cup minced onion


Ground black pepper

1 pound fresh or dried pasta (any shape)

1/4 cup ( 1/2 stick) butter

20 fresh sage leaves

In a bowl, combine meat, egg, cheese, parsley, onion and salt and pepper to
taste. Mix well but do not knead. Form into 1/2-inch balls. Refrigerate until
ready to cook.

Bring a large pot of salted water to a boil. Add meatballs; cook about 5
minutes. Remove meatballs with a slotted spoon and keep warm.

If necessary, return water to a boil. Add pasta; cook until tender but not

Meanwhile, in a medium pot, cook butter and sage until butter is light brown,
about 5 minutes.

Before draining pasta, reserve a bit of the cooking water. Drain pasta, then
toss it with the butter-sage mixture and enough reserved water to make it saucy.

Top with meatballs; serve, passing grated Parmesan at the table.

Per serving (based on 6 servings): 494 calories; 18g fat (33 percent
calories from fat); 9g saturated fat; 109mg cholesterol; 26g protein; 57g
carbohydrate; 3.5g sugar; 2.5g fiber; 141mg sodium; 95mg calcium; 318mg
