Post subject: Whole meal, Spicy Grilled Shrimp...

Spicy Grilled Shrimp
Prep: 10 min, Marinate: 10 min, Cook: 10 min.
* 1 ounce sun-dried tomatoes
* 1 cup boiling water
* 2 Tbs. lemon juice
* 2 Tbs. olive oil
* 1/2 tsp. crushed red pepper
* 1-1/2 lbs. large shrimp, deveined
* skewers
Prepare grill. Cover tomatoes with boiling water in a bowl. Let stand 10 minutes. Drain tomatoes, reserving 1/4 cup soaking liquid. Place tomatoes, reserved soaking liquid, lemon juice, oil, red pepper and salt to taste in a blender or food processor. Process until well blended and pour over shrimp. Thread shrimp onto long skewers. Place skewers on grill over medium heat. Grill 8 minutes, turning skewers occasionally and brushing with any remaining tomato mixture, until shrimp turn opaque throughout.

Broccoli and Zucchini with Vinaigrette
Prep: 15 min, Cook: 5 min.
* 3/4 lb. broccoli florets
* 3/4 lb. zucchini, cut into 1/4 inch thick slices
* 1 red bell pepper, seeded and cut into 1/4 inch strips
* 3 Tbs. olive oil
* 2 Tbs. balsamic vinegar, or red wine vinegar
* 1 clove garlic, crushed
* 1/4 tsp. thyme, or 1 tsp. fresh, minced
Place broccoli in a steamer basket over boiling water. Cover saucepanand steam 3 minutes or until broccoli is bright green. Transfer broccoli to a mixing bowl. Add zucchini and bell pepper and toss. Combine remaining ingredients and salt and pepper to taste in jar with a tight-fitting lid. Shake vigorously. Pour dressing over vegetables and toss.

Strawberry Chocolate Frozen Yogurt Sundaes
Prep: 10 min.
* 4 cups lowfat chocolate frozen yogurt
* 2 cups strawberries, hulled and sliced
* 1 cup chocolate fudge topping
* 2 Tbs. chopped pecans
* 1/2 cup frozen non-dairy dessert topping
Serve frozen yogurt with strawberries, fudge topping and nuts. Top with dessert topping.
