Grilled Shrimp with Pasta and Pineapple Salsa
From The American Diabetes Association's Flavorful Seasons Cookbook


Prep: 20 min, Cook: 5 min.

* 2 lbs. pineapple chunks, packed in their own juice, drained
* 1 large red bell pepper, chopped
* 1 large red onion, chopped
* 1 jalapeño pepper, minced
* 1/2 cup orange juice
* 1/3 cup lime juice
* 1-1/2 cups shrimp, peeled and deveined
* 2-2/3 cups cooked rotini pasta

In a large bowl, combine all salsa ingredients, except the shrimp and pasta. Prepare an outside grill with an oiled rack set 4 inches above the heat source. On a gas grill, set the heat to high. Grill the shrimp on each side for 2 minutes. Toss the pasta with the salsa, arrange the shrimp on top, and serve.

Spanish Baked Fish
Prep: 15 min, Cook: 20 min.

* 1 lb. perch fillets
* 1 cup tomato sauce
* 1/2 cup onions, sliced
* 1/2 tsp. garlic powder
* 2 tsp. chili powder
* 1 tsp. dried oregano
* 1/8 tsp. ground cumin

Preheat oven to 350°F. Please fish in lightly greased 9x13 inch baking dish. Mix remaining ingredients and spread over fish. Bake until fish flakes easily with a fork, about 15 to 20 minutes.

Per serving: calories 136, fat 1.4g, 10% calories from fat, cholesterol 102mg, protein 23.3g, carbohydrates 7.3g, fiber 1.8g, sugar 3.8g, sodium 454mg, diet points 3.0.

Grilled Chicken Kabobs

Prep: 10 min, Marinate: 2:00, Cook: 15 min.

* 1/4 cup water
* 2 Tbs. soy sauce
* 2 Tbs. lemon juice
* 1 Tbs. honey
* 1/4 tsp. garlic powder
* 1/4 tsp. ground ginger
* 4 boneless skinless chicken breast halves, cut into 1-1/2 inch pieces
* skewers
* 1 green bell pepper, seeded and cut into 1-1/2 inch pieces
* 1 onion, quartered
* 8 large cherry tomatoes

Combine first 6 ingredients in a glass baking dish. Add chicken and turn to coat. Cover and marinate at least 2 hours in refrigerator. Prepare grill. Remove chicken from marinade and boil marinade 10 minutes in a saucepan. Alternate chicken and vegetables on skewers. Grill 6 inches from medium-hot coals 15-20 minutes, or until done, turning and basting often with marinade.

Per serving: calories 323, fat 3.7g, 10% calories from fat, cholesterol 106mg, protein 46.4g, carbohydrates 28.2g, fiber 5.0g, sugar 18.1g, sodium 611mg, diet points 6.3.

Alaskan Crab Salad
Prep: 10 min.

* 1 lb. european salad (or other packaged salad mix)
* 2 cups cherry tomatoes
* 1 cucumber, thinly sliced
* 1 lb. fancy white crabmeat
* 1 cup fat-free Thousand Island dressing

Arrange lettuce salad on plates. Top with tomatoes, cucumber and crab and drizzle with dressing.

Per serving: calories 246, fat 2.0g, 7% calories from fat, cholesterol 101mg, protein 26.3g, carbohydrates 30.2g, fiber 5.3g, sugar 16.1g, sodium 995mg, diet points 4.5.
