Chicken Salad Sandwiches

Serves 4

Prep: 10 min.

* 10 ounces canned chunk chicken, drained
* 1/2 cup celery, chopped
* 1/4 cup plus 2 Tbs. mayonnaise
* 2 Tbs. onions, finely chopped
* 2 tsp. lemon juice
* 8 slices bread
* 4 lettuce leaves
* 8 slices tomato

Combine first 4 ingredients and salt and pepper to taste in a bowl. Divide chicken mixture between 4 bread slices. Top with lettuce, tomato and remaining bread slices.

Per serving: calories 460, fat 25.1g, 47% calories from fat, cholesterol 72mg, protein 28.8g, carbohydrates 35.8g, fiber 0.7g, sugar 3.6g, sodium 476mg, diet points 11.6.

Dietary Exchanges: Milk: 0.0, Vegetable: 0.6, Fruit: 0.0, Bread: 2.2, Lean meat: 0.0, Fat: 3.4, Sugar: 0.0, Very lean meat protein: 2.8Per serving:

The recommended wine is: Fumé Blanc.

Knock down a few of the dietary points use wheat bread.
