This will surley, and don't call me Shirley, soften
up those hard oatmeal cookies.... Very Happy

Yield: About 4 dozen

1 cup (2 sticks) margarine or butter, softened

1 cup packed brown sugar

1/2 cup granulated sugar

2 eggs

1 teaspoon vanilla

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

3 cups rolled oats

1 cup raisins

1/2 (15.5-ounce) can applesauce or 2 (4-ounce) cups applesauce

Preheat oven to 350 degrees. Beat together margarine and sugars until creamy.
Add eggs and vanilla; beat well. Combine flour, baking soda, cinnamon, ginger
and cloves. Add to egg mixture; mix well. Stir in oats, raisins and applesauce,
mixing well.

Drop by rounded tablespoons on ungreased cookie sheets. Bake until golden
brown, 12 to 14 minutes. Let cool 1 minute on cookie sheets, then remove to
wire rack. When cool, transfer to an airtight container.

Per cookie: 117 calories; 4.5g fat (35 percent calories from fat);
2.5g saturated fat; 19mg cholesterol; 1.5g protein; 17.5g carbohydrate; 8.5g
sugar; 1g fiber; 35mg sodium; 12mg calcium; 74mg potassium.
