Remember Valentines Day approaches!!!!!

Yield: 14 servings

12 (1-ounce) squares semisweet baking chocolate, divided

3/4 cup (1 1/2 sticks) butter or margarine

1 (3-ounce) package raspberry flavor gelatin

1/2 cup granulated sugar

3 eggs

1/3 cup all-purpose flour

1/2 cup chopped pecans, toasted (optional)

1 (8-ounce) tub nondairy whipped topping, thawed

Step1: Preheat oven to 350 degrees. Grease and flour a 9-inch round
cake pan; line the bottom with waxed paper. Grease top of paper.

Microwave 4 squares chocolate with butter in a large microwaveable bowl on high
power for 1 1/2 to 2 minutes or until chocolate is almost melted, stirring
after 1 minute. Stir until chocolate is completely melted. Stir dry gelatin mix
and sugar into chocolate until well blended. Mix in eggs. Stir in flour and
pecans until well blended. Pour into prepared pan.

Step 2: Bake for 35 minutes or until a toothpick inserted in the
center comes out with fudgy crumbs. Do not overbake. Let cool in pan for 5
minutes. Run a small knife around side of pan to loosen edge. Invert onto
serving platter; remove waxed paper. Let cake cool completely.

Step 3: Melt 4 squares chocolate in microwave on high power for 1
1/2 minutes or until almost melted, stirring after 1 minute. Stir until
chocolate is completely melted. Spread on a baking sheet covered with waxed
paper; refrigerate for 30 minutes.

Step 4: Meanwhile, melt the remaining 4 squares chocolate in a
medium microwaveable bowl on high power for 1 1/2 minutes or until almost
melted, stirring after 1 minute. Stir until chocolate is completely melted;
stir in whipped topping until smooth. Frost cake with whipped chocolate mixture.

Step 5: Remove chocolate on baking sheet from refrigerator; using a
sharp knife, cut into 1 1/2- to 2-inch irregularly shaped pieces. Remove
chocolate pieces from waxed paper; arrange on top of cake. Store cake in
refrigerator.

Per serving: 350 calories; 24g fat (62 percent calories from fat);
13g saturated fat; 70mg cholesterol; 4g protein; 34g carbohydrate; 26g sugar;
2g fiber; 115mg sodium.
