Big Elwood on a stick

Yields: 4 servings or less if ya real hungry...h a

1/2 cup vegetable oil 1 1/4 pounds beef tenderloin
1/3 cup soy sauce Corarsly cracked black pepper
1/4 teaspoon garlic powder 2 green bell peppers

MMM MMMM Sounds good already..

In a self-sealing plastic bag, combine oil, soy sauce and garlic powder;
shake to mix well. Cut tenderloins into 1- inch cubes; coat tenderloin lightly
with cracked peppers. Add beef cubes to marinade; put in fridge 24 hours.

Prepare a medium fire in the grill, not on it, or preheat the broiler. Cut peppers
into 28 squares.

Discard marinade; thread meat onto metal skewers alternately with peppers.
Grill for 25 minutes or to desired doneness, turning as necessary, or broil 12 to
15 minutes, turning twice.

Serve immediately.

Per Serving: 291 calories;16.5g fat (51% calories from fat); 5g sat-
urated fat; 98 mg cholesterol; 32g protein; 3.5g carbohydrate; 2g sugar;
1g fiber; 717mg sodium; 24mg calcium; 486mg potassium.
