In my search for a good cream pea recipe, I found many, but none that quite matched what I wanted. So I took to my own creativity and came up with this absolutely fabulous recipe. We love it so much we have this on the side quite often.


Serves 4

INGREDIENTS (Nutrition)

* 2 cups frozen green peas, thawed
* 2/3 cup water
* 1/8 teaspoon salt
* 3 tablespoons butter
* 1/3 cup heavy cream
* 2 tablespoons all-purpose flour
* 1 tablespoon white sugar

DIRECTIONS

1. In a medium saucepan, combine peas, water, and salt. Bring to a boil, then stir in butter.
2. In a small bowl, whisk together cream, flour, and sugar. Stir mixture into peas. Cook over medium-high heat until thick and bubbly, about 5 minutes.

Cream Of Pea Soup Recipe


Cream Of Pea Soup Recipe 2



Ingredients for Cream Of Pea Soup Recipe

* 1 can peas
* 2 teaspoons
sugar
* 1 pint cold water
* 1 pint milk
* 2 tablespoons butter
* 1 tablespoon flour
* Salt and pepper


Instructions

1. Drain the peas from their liquor, rinse thoroughly. Add sugar and
cold water and simmer twenty minutes.
2. Rub through a sieve.
3. Scald the milk.
4. Melt the butter, add the flour, and pour on gradually the scalding milk.
5. Cook thoroughly, stirring carefully.
6. Add to the pea stock, reheat and serve.


OR



I always liked split pea soup.

Ingredients for Cream Of Split Pea Soup Recipe

* 1 cup split peas
* 2 quarts water
* 2 tablespoons chopped onions
* 3 tablespoons butter
* 2 tablespoons flour
* 1 teaspoons salt
* 1 pint milk


Instructions

1. Wash the peas and soak them overnight in cold water.
2. Drain, and rinse thoroughly, adding two and one-half quarts of cold water and the onion.
3. Cook slowly until soft and press through a strainer.
4. Make a white sauce of the remaining ingredients and add to the above.
5. Cook together five minutes.
