Eyeball Assortment



Red Eye Specials


Makes: 60 eyes (30 servings)
Prep: 30 minutes
Start to Finish: 30 minutes



Ingredients

* 30 small plum tomatoes (about 2 inches long)
* 2/3 cup purchased pesto
* 2 containers (6 oz. each) bocconcini (mini fresh mozzarella balls)
* About 30 pitted black olives
* 2 green onions

Directions

1. Cut tomatoes in half crosswise. Trim off the end of each half so that tomato cup will set upright. Scoop out insides of tomato with small spoon and/or melon baller. Spoon 1/2 teaspoon pesto into each tomato cup. Drain bocconcini and cut each piece in half. Use end of drinking straw to scoop out a little dent in center of the rounded side of each bocconcini. Use same straw to cut out "pupils" from olive halves. Place half a bocconcini in each tomato cup. Place olive inside the hole for pupil. For eyelashes, using scissors, cut the green top of the green onions into 1/4-inch pieces. Snip the onion ring so that you have a narrow strip. Use scissors to make multiple cuts almost to edge of strip. Tuck eyelashes into gap between cheese and tomato with toothpick. Makes 60 eyes (30 servings).

Makes: 60 eyes (30 servings)
Start to Finish: 1 hour, 15 minutes



Ingredients

* 1/2 pound lean ground beef
* 1 cup fresh bread crumbs
* 1/3 cup finely chopped onion
* 1 egg
* 3 cloves garlic, minced
* 2 teaspoons Worcestershire sauce
* 1/4 cup onion, finely chopped
* 3 cloves garlic, minced
* 3/4 teaspoon dried oregano, crushed
* 1/2 teaspoon dried basil, crushed
* 3/4 teaspoon salt
* 1/2 teaspoon ground black pepper
* 2 tablespoons olive oil
* 1/4 cup finely chopped onion
* 3 cloves garlic, minced
* 3/4 teaspoon dried oregano, crushed
* 1/2 teaspoon dried basil, crushed
* 1 28-ounce can crushed tomatoes in puree
* 4 packages (2.1 oz, 15 pieces) baked mini phyllo shells
* 2 ounces thinly sliced part-skim mozzarella
* 30 pitted black olives, halved lengthwise

Directions

1. In medium bowl mix together ground beef, bread crumbs, 1/3 cup of the chopped onion, egg, 3 cloves garlic, Worcestershire sauce, 3/4 teaspoon oregano, 1/2 teaspoon basil, 3/4 teaspoon salt, and pepper. Divide mixture into 60 portions and roll into ball.

2. In large skillet heat oil over medium high heat. Brown meat balls on all sides, shaking skillet to loosen, preferably in 2 batches. Remove all meatballs to plate; reserve. Add remaining 1/4 cup onion, 3 cloves garlic, 3/4 teaspoon oregano, and 1/2 teaspoon basil to skillet; cook and stir for 3 to 4 minutes or until onion is tender. Add tomatoes and reserved meatballs; bring to a boil. Reduce heat to low; simmer until meatballs are cooked through, 20 to 25 minutes.

3. Preheat oven to 350 degree F. Place phyllo shells on baking sheet. Heat through, 5 to 6 minutes. Place a scant tablespoon of sauce in each phyllo cup. Top with a meatball.

4. For eyeball decoration, cut out 60, 3/4-inch circles from sliced mozzarella using aspic or small round cookie cutter. Place one circle of cheese on each meatball. Cut out small circles from olive half using a drinking straw. Place olive circles on top of cheese. Return to oven, 1 to 2 minutes or until cheese just begins to soften. Serve warm. Makes 60 eyes (30 servings).

Snake Eyes

Makes: 60 eyes (30 servings)
Prep: 30 minutes
Start to Finish: 30 minutes


Ingredients

* 30 large black grapes, dried plum or dried figs, halved either vertically or horizontally
* 1 ounce prosciutto, cut into 1/2-inch pieces
* Freshly ground black pepper
* 1 8-ounce container mascarpone cheese
* 1 tablespoon Amaretto or almond liqueur
* 2 teaspoons sugar

Directions

1. Trim rounded end of grape so that grape will sit on plate without rolling. Using melon baller or small spoon, scoop out insides of grapes including any seeds; discard. (If using dried plums or dried figs, simply cut those in half.) Place one piece of prosciutto inside each piece of fruit. Sprinkle with black pepper. In small bowl stir together mascarpone, Amaretto, and sugar.

2. Place cheese mixture in pastry bag fitted with small round tip. (Or, transfer mixture to a heavy-duty plastic food storage bag; snip off one corner). Pipe filling into fruit halves, mounding into semi-circle. Decorate with various trimmings of grapes for pupils or sliced almonds. Chill until served. Makes 60 eyes (30 servings).

Bat Wings

Makes: 20 appetizers
Prep: 20 minutes
Marinate: 2 to 24 hours
Bake: 25 minutes


Ingredients

* 20 chicken wings (3-1/2 pounds)
* 1/2 cup soy sauce
* 2 teaspoons grated fresh ginger or 1/2 teaspoon ground ginger
* 1/4 teaspoon crushed red pepper
* 1 teaspoon five spice powder
* 2 cloves garlic, minced
* 1 recipe Swamp Dip

Directions

1. Place wings in a plastic bag set in a shallow dish. In a small bowl stir together soy sauce, ginger, crushed red pepper, five spice powder and garlic. Pour over wings. Close bag and toss to coat. Chill in refrigerator several hours or overnight, turning bag occasionally. Remove wings from bag, reserving marinade.

2. Place wings on a foil-lined 15x10x1-inch baking pan. Bake, uncovered, in a 450 degree F oven for 10 minutes. Brush with reserved marinade (discard remaining marinade). Bake 15 to 20 minutes longer or until chicken is tender and no longer pink. Serve with Swamp Dip. Makes 20 appetizers.

Swamp Dip: In a small bowl stir together a 8-ounce container of dairy sour cream and 3 tablespoons coarse ground mustard. Garnish with fresh whole chives. Serve with bat wings.

Graveyard Gravel


Prep: 35 minutes
Chill: 2 hours
Cook: 5 minutes


Ingredients

* 3 cups semisweet chocolate pieces
* 1 14-ounce can sweetened condensed milk
* 2 tablespoons butter or margarine
* 1-1/2 tsp. vanilla
* Dash salt
* 2 cups tiny marshmallows
* Unsweetened cocoa powder mixed with an equal amount of powdered sugar
* Powdered sugar

Directions

1. Line a 9x9x2-inch or an 8x8x2-inch baking pan with foil; set aside.

2. In a medium saucepan, heat and stir chocolate pieces, condensed milk, butter, vanilla, and salt over medium heat until melted and smooth. Remove from heat; stir in marshmallows just until combined. Spread mixture evenly in the prepared pan. Using a table knife or thin metal spatula, swirl marshmallows through fudge in pan until marshmallows are mostly melted. Cover and chill about 2 hours or until firm.

3. Using a small scoop, scoop fudge and shape into rocks (fudge will be sticky). Roll some in cocoa powder mixture and some in powdered sugar. Store in an airtight container for up to 3 days. Makes about 80 pieces (2 1/4 lbs.).

Ghoul's Punch


Makes: 8 (about 10-ounce) servings
Prep: 20 minutes
Freeze: 8 to 24 hours


Ingredients

* 6 cups unsweetened pineapple juice, chilled
* 3 cups cold water
* 1 6-ounce can frozen lemonade concentrate
* 4 blood orange or orange slices
* 1 recipe Frozen Hands (see recipe below)

Directions

1. For punch, in a punch bowl stir together pineapple juice, water, and lemonade concentrate. Float orange slices and Frozen Hands in punch. Makes 8 (about 10-ounce) servings.

Frozen Hands: Carefully pour cranberry juice cocktail into 2 or 3 clear plastic gloves.* Fill the gloves so that the fingers can move easily. Tightly seal the gloves with rubber bands. Place on a baking sheet lined with paper towels. Freeze until firm. Use scissors to cut the gloves off the frozen hands. If any fingers break off, add them separately to punch.

*Note: Be sure to use gloves without powder. Or, rinse powdered gloves thoroughly before using.
