Sergeant Major
Ingredients:

* 6 catfish fillets, about 6 to 8 ounces each
* 1/2 cup evaporated milk
* 1 tablespoon salt
* dash pepper
* 1 cup flour
* 1/2 cup yellow cornmeal
* 2 teaspoons paprika
* 10 to 12 slices bacon

Preparation:
Clean, wash and dry fish. Combine milk, salt and pepper in a bowl. In a pie plate or shallow dish, combine flour, cornmeal and paprika. Dip fish in milk mixture then roll in flour and cornmeal mixture. Fry bacon in a heavy skillet until crisp. Remove bacon, leaving bacon drippings in skillet. Drain bacon on paper towels. Fry fish in hot drippings for about 4 minutes. Turn carefully with a spatula and fry for 4 to 6 minutes longer, or until fish flakes easily with a fork and is browned. Drain on paper towels. Serve with bacon or save bacon for another use. Serve with hush puppies and coleslaw, if desired.
Serves 6.


Blackened Catfish Ole

Easy

n this recipe, catfish is coated with a bread crumb margarita mix combination and fried or broiled.
Ingredients:

* 1 pound catfish fillets
* 1 envelope Margarita cocktail mix
* 1 egg, beaten
* 1/2 cup seasoned bread crumbs
* or cornmeal, seasoned with salt & pepper

Preparation:
Combine breadcrumbs and Margarita mix in plastic bag. Moisten catfish fillet in egg, then shake or roll in crumbs, pressing them firmly into the fish. Pan fry in 2 to 4 tablespoons oil or margarine, or broil on greased pan in oven at 12 to 14 minutes per side.
Serves 2 to 3.


Skillet Fried Fish Nuggets

Easy fish nuggets with a pancake mix and bread crumb batter.
Prep Time: 5 minutes
Cook Time: 8 minutes
Ingredients:

* Canola oil for frying
* 3 pounds fish fillets
* lemon pepper
* garlic salt
* 1 cup pancake mix
* 1 cup seasoned bread crumbs
* 1/4 cup water
* 1 egg, beaten

Preparation:
Heat about 1/2 inch of oil in a large deep skillet over medium heat (about 350 to 365). Cut fish in bite-sized pieces. Lightly sprinkle with lemon pepper and garlic salt. Combine pancake mix and bread crumbs in a large plastic food storage bag. Dip fish in a mixture of beaten egg and water. Place fish in bag to coat with crumbs. Fry in hot oil for 7 to 8 minutes, or until golden brown, turning once.

Drain well on paper towels; serve fried fish nuggets immediately with cocktail sauce or tartar sauce.
