Yield: 30 skewers

About 1 slice bread

1 egg, beaten

1 (8-ounce) can pizza sauce, divided

2 tablespoons finely chopped onion

1 tablespoon snipped parsley

1 clove garlic, minced

1/4 teaspoon salt

1/8 teaspoon ground black pepper

8 ounces ground beef

4 ounces bulk Italian sausage

30 cheese tortellini

Spinach leaves or salad greens

Step 1: Cut crusts from bread; tear bread into chunks and pulse in a
blender until soft crumbs form. Measure out 3/4 cup crumbs.

Step 2: Combine beaten egg, 2 tablespoons pizza sauce, bread crumbs,
onion, parsley, garlic, salt and pepper in a large mixing bowl. Add ground beef
and Italian sausage; mix gently but well.

Step 3: Shape mixture into 30 meatballs. Place meatballs in a
2-quart microwave-safe baking dish.

Step 4: Cover dish with waxed paper. Microwave on high power for 6
to 8 minutes or until meatballs are done, rearranging meatballs and rotating
the dish a half-turn once. Drain meatballs on paper towels. (Or bake meatballs
in a 400-degree oven about 15 to 20 minutes or until meat is no longer pink in
the center and juices show no pink color.)

Step 5: Meanwhile, cook tortellini according to package directions.
Drain well.

Step 6: Place remaining pizza sauce in a 2-cup glass measure.
Microwave, covered, on high for 2 to 3 minutes or until heated through,
stirring once. Pour into a small serving bowl. Place the bowl in the center of
a platter lined with spinach leaves or salad greens.

Step 7: Spear a meatball and a tortellini on each of 30 cocktail
picks or short skewers. Arrange meatball kebabs on the platter around the pizza
sauce. Serve warm.

Per skewer: 48 calories; 3g fat (56 percent calories from fat); 1g
saturated fat; 15mg cholesterol; 3g protein; 3g carbohydrate; no fiber; 134mg
