[size=18]Glazed Roasted Ham[/size]
Prep: 10 min, Cook: 4:00.
* 1 uncooked butt-end ham, about 12 lbs. each, bone-in, fat trimmed
* 2 cups apricot jelly or jam
* 1/4 tsp. ground cloves
* 2 tsp. dry mustard
* 2 Tbs. cider vinegar
* 16 whole cloves, approximately
* 1-1/4 lbs. unsweetened pineapple slices, drained
Preheat oven to 350°F. Place ham on a rack in a shallow roasting pan and bake about 3 hours or until a meat thermometer registers 130°F. Using a sharp knife, score 1/4 inch deep cuts around outside of ham in a diamond pattern. Combine next 4 ingredients in a small saucepan over low heat, stirring until jelly has melted. Spread mixture around outside of ham and stud with cloves. Attach pineapple rings to ham with toothpicks. Return to oven and bake about 1 hour longer, basting occasionally with remaining apricot mixture, until a meat thermometer registers 160°F. Remove ham from oven, and allow to rest 10 minutes before slicing. Remove toothpicks before serving.

Basic Buttered Green Beans
Prep: 5 min, Cook: 10 min.
* 1 lb. green beans, trimmed
* 2 tsp. unsalted butter, melted
Place green beans in a steamer basket over boiling water. Cover saucepan and steam 8-10 minutes or until tender. Transfer to a serving bowl and toss with butter and salt and pepper to taste.

Cream of Red Onion Soup
Prep: 15 min, Cook: 50 min.
* 2 tsp. unsalted butter
* 1-1/2 lbs. red onion, thinly sliced
* 2 celery ribs, thinly sliced
* 1/8 tsp. white pepper
* 1/4 tsp. ground nutmeg
* 2 cups chicken stock
* 2 cups milk
* 1 cup whipping cream
* 1 Tbs. dry sherry (optional)
* 1 cup seasoned croutons
Melt butter in a heavy pot over low heat. Add onion and celery. Cover and cook 15-20 minutes until celery is softened. Add next 3 ingredients and salt to taste. Increase heat to medium high and bring to a boil. Reduce heat to medium low and simmer 10 minutes. Transfer mixture to a food processor or blender and purée until smooth. Return purée to pot. Stir in milk and simmer 10 minutes over medium heat. Add cream and simmer until just hot. Do not boil. Remove from heat. Stir in sherry and serve with croutons.

Chocolate Chip Cookies
Prep: 15 min, Cook: 15 min.
* 1 cup all purpose flour
* 1/2 tsp. baking soda
* 1/2 tsp. salt (necessary)
* 2 Tbs. unsalted butter
* 1/4 cup light cream cheese
* 1/4 cup plus 2 Tbs. brown sugar
* 1/4 cup plus 2 Tbs. sugar
* 1 large egg
* 1 egg white
* 1 tsp. vanilla extract
* 1/2 cup semisweet chocolate chips
Preheat oven to 375°F. Sift together flour, baking soda and salt in a mixing bowl. Set aside. Melt butter in a small saucepan over low heat. Cook butter 30-60 seconds tilting the pan occasionally until butter turns nutty brown. Pour butter in a large mixing bowl. Add cream cheese and both sugars. Beat with electric mixer until smooth. Add egg, egg white and vanilla. Beat until mixture is mixed thoroughly. Transfer flour mixture and chocolate chips to egg and sugar mixture and stir with a wooden spoon until just combined. Drop heaping tablespoons of batter 2 inch apart on cookie sheet lined with parchment paper or sprayed with nonstick cooking spray. Bake 12-15 minutes or until cookies are golden. Let cool on racks.
