Post subject: Sardine And Black-Eyed Pea Salad
Yield: 4 servings
2 cups cooked black-eyed peas

1 (4.25-ounce) can sardines packed in oil, drained and broken into bite-size pieces

1/4 cup chopped green onions

1 tablespoon capers

1/4 cup chopped celery

1/4 teaspoon salt or to taste

1/4 teaspoon ground black pepper or to taste

1 tablespoon olive oil

Grated zest (colored portion of peel) of 1 lemon

1 1/2 to 2 teaspoons lemon juice

1 tablespoon chopped Italian parsley, optional

If using canned black-eyed peas, rinse and drain. In a large bowl, combine black-eyed peas, sardines, green onions, capers and celery. In a cup, stir together salt, pepper, oil, lemon zest, lemon juice to taste and parsley. Pour over salad. Toss gently but well.

Per serving: 200 calories; 7g fat; 41mg cholesterol; 12g protein; 30.5g carbohydrate; 4g fiber; 700mg sodium.
