ield: 6 servings
1 head cabbage
1 (3 1/2-pound) corned beef
1 bunch carrots, tops removed
Remove outer leaves from cabbage; use to line a steamer basket. Put corned beef
in the steamer basket. Steam in a covered pot over gently simmering water for 2
Cut the cabbage into 6 wedges. Put cabbage and carrots on top of corned beef;
steam until corned beef and cabbage are fork-tender, about 30 minutes.
Per serving: 409 calories; 26g fat; 93mg cholesterol; 28g protein;
16g carbohydrate; 2g fiber; 263mg sodium.
